fresh start and a giveaway!

Hello friends! WELCOME WELCOME WELCOME!

Behold…

the blog that has kept me up for hours,

into the wee hours of the night,

made me neglect my furry friends and my little girl!

I made the decision to revamp my blog a while back, but I just wasn’t happy with Blogger.  I wanted something that could feature my store a little better and just look a little more polished.  But, while many people would go out and hire themselves a professional designer to build them the blog of their dreams…well we’re still on a spending hiatus over here.  And so, I headed to Barnes and Noble and purchased books on CSS code, Javascript, and HTML.  After 2+ weeks, I did it!  Me, myself, and I ACTUALLY DESIGNED A BLOG! Holy crud, I still can’t believe it. Yes, it still needs some fine tuning, but all in all I’m pretty darn happy with my results.

FYI, the store isn’t 100% done.  I have a developer working on setting it up completely.  But if you are interested in purchasing anything you can still email me to purchase items.

This morning we woke up to what actually felt like a Fall day…cloudy, cool, leaves falling.  So I made these DELICIOUS pumpkin muffins.  And while the little one watched Ice Age 3, I got to enjoy a nice cup of coffee, a warm mufffin, and some Pro Blogger reading.  I’ve become quite the computer geek these last few weeks. The hubby is so proud!

Ingredients

  • Cooking spray
  • 1 cup all-purpose flour
  • 1 cup whole-grain pastry flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 3/4 cup packed dark brown sugar
  • 3 tablespoons unsulphered molasses
  • 1/4 cup canola oil
  • 2 large eggs
  • 1 cup canned pumpkin
  • 1 teaspoon vanilla extract
  • 3/4 cup lowfat buttermilk
  • 1/4 cup raw, unsalted pumpkin seeds

Directions

Preheat oven to 400 degrees F. Coat a 12-cup muffin pan with cooking spray.

In a medium bowl, whisk together the all-purpose and whole-wheat flours, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.

In a large bowl, whisk the sugar, molasses, oil and 1 egg until combined. Add the other egg and whisk well. Whisk in the pumpkin and vanilla. Whisk in the flour mixture in 2 batches, alternating with the buttermilk. Whisk just until combined.

Pour the batter into the prepared muffin pan and sprinkle with the pumpkin seeds. Tap the pan on the counter a few times to remove any air bubbles. Bake for 20 minutes or until a wooden pick inserted in center of 1 of the muffins comes out clean.

Let cool on a wire rack for 15 minutes. Run a knife around the muffins to loosen them and unmold. Cool completely on the rack.
